Wear Red on Friday's


George Strait has put out the call to his fans to wear red on Friday's. His request is to show support for our U.S. troops as part of Red Shirt Fridays.

Through the website redshirtfridays.org, George is inviting folks to wear red shirts every Friday, in an effort to let servicemen and women know they are not forgotten.

The legendary performer is an Army veteran. George enlisted in 1971 and was stationed at Schofield Barracks in Hawaii as part of the 25th Infantry Division. He was honorably discharged from the Army in 1975.

Bonnie's Perfect Chocolate Chip Cookies


1 cup (2 sticks) unsalted butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 large eggs
1 tsp vanilla extract
2 tbsp water
2 1/2 cups flour
1 tsp baking soda
1 tsp salt
1 pkg of semi-sweet morsels

1. Beat butter and sugars until light colored and creamy. Beat in eggs, one at a time until well blended. Add vanilla and water, blend well.

2. In a seperate bowl combine flour, baking soda and salt; gradually stir into butter mixture. Stir in morsels.

3. Drop rounded teaspoonfuls onto cookie sheet, about 2 inches apart. Bake 10 to 15 min or until golden brown @ 350 degrees. Cool on wire racks.

4. Enjoy with a glass of milk. :)

5. Store in an air tight container or large ziploc bag with a slice of bread.

James Otto's Chocolate Chip Cookies

Time and Yield

  • Cook time: 8-12 min
  • Yield: 3 1/2 dozen cookies

Ingredients

  • 1 cup (2 sticks) butter (no substitutes)
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 package (10 or 12 ounces) Hershey's Chips or Baking Bits (any flavor)

Directions

Heat oven to 350 degrees Fahrenheit. In large bowl, beat butter and sugars until light and fluffy. Add corn syrup, egg and vanilla; beat well. Stir together flour, baking soda and salt; gradually add to butter mixture, beating until blended. Stir in chips. Drop by rounded teaspoons onto ungreased cookie sheets.

Bake 8-10 minutes or until lightly browned and almost set. Cool slightly, remove from cookie sheets to wire racks. Cool completely. Cookies will be softer the second day. Makes about 3 1/2 dozen cookies.

Shania Twain is planning a wedding! US Weekly magazine has confirmed news that the country superstar is engaged to Swiss-born Nestle executive, Frederic Thiebaud.

The groom-to-be is the ex-husband of Marie-Anne Thiebaud, the woman accused of breaking up Shania's marriage of 14 years to famed rock producer Robert John 'Mutt' Lange. The two scorned parties, Shania and Frederic, found comfort in one another during the scandal and have been inseparable ever since.

"I've never seen Shania so happy," a pal told US Weekly. "She has ended up with the love of her life."

Shania announced the relationship August 29, 2009, her 44th birthday, via her website. "A dear friend and true gentleman by the name of Fred, has been the most constant companion of support for both Eja and me," she wrote. "And having gone through the suffering of his family splitting apart at the same time under the same extreme circumstances, he understood me better than anyone. We leaned on one another through the ups and downs, taking turns holding each other up. Time and Yield

  • Cook time: 15-20 min
  • Yield: 3 dozen cookies

Ingredients

  • 3/4 cup sugar
  • 3/4 cup light brown sugar
  • 6 ounces (1 1/2 sticks) unsalted butter, softened
  • 3/4 cup peanut butter
  • 2 eggs
  • 1 3/4 cups flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Directions

Preheat the oven to 350 degrees F.In a mixer with a paddle attachment, combine the sugars, butter and peanut butter. Beat until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating after each addition. Sift together the flour, the baking soda and the salt and add to the dough. Dough should be stiff enough to shape with your hands. Make 1-inch balls and place on a lightly greased cookie sheet. Gently press thumb into the balls to flatten the cookies slightly and make an indentation in the center of the cookie. Press 3 or 4 chocolate chips into the indentation.

Bake for 15 to 20 minutes, or until lightly golden brown. Remove cookies from the oven and transfer to wire racks to cool.

Salvation Army Shoe Fund


For over 30 years, WFLS has teamed with the Salvation Army for the annual Shoe Fund. With your help, we have raised over a million dollars. We THANK YOU so much!! :)

Nearly 2,000 area children were identified by school nurses and counselors this past year as being in need of Shoe Fund certificates. We realize that very few children in our area go barefoot, but there are so many that have inadequate footwear.

They may have one pair of shoes that may work for summer, but not for cold weather months.

They may be wearing hand-me-downs which are too big or too small.

They may be unable to play a sport because they can’t afford the specialty shoes.

The stories are numerous. Too numerous.

Creamy Louisiana Pecan Pralines

Time and Yield

  • Cook time: Varies
  • Yield: Approx. 2 dozen

Ingredients

  • 2 cups sugar
  • 1/2 cup Steen's Louisiana Cane Syrup
  • 1/2 cup water
  • 2 cups pecan halves
  • 1/2 stick butter
  • 1 tbsp vanilla

Directions

In a heavy 3 qt saucepan, combine sugar, cane syrup, water and pecans. Stir over medium heat until sugar is dissolved, and mixture comes to a boil. Cook, stirring occasionally, until mixture reaches "soft ball" stage (a small amount forms a soft ball when dropped into cold water-very important to not OVERCOOK!).

Remove saucepan from heat, quickly add butter and vanilla. Allow candy to cool. Whip until mixture gradually changes to lighter color and becomes creamy.

Drop by tablespoon on greased cookie sheet. Work quickly. Push mixture from tablespoon with a teaspoon before praline becomes too firm to shape.

Makes appox 2 dozen.

  • 1 3/4 cups white sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • 4 tablespoons unsweetened cocoa powder
  • 1/2 cup crunchy peanut butter
  • 3 cups quick-cooking oats
  • 1 teaspoon vanilla extract

Directions

In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Remove from heat, and stir in peanut butter, oats, and vanilla. Drop by teaspoonfuls onto wax paper. Let cool until hardened.

Ingredients

  • Townhouse Crackers
  • Peanut Butter
  • Chocolate Bark; white or dark
  • Sprinkles (optional)

Directions

Use a double boiler to melt the chocolate bark. Spread peanut butter between two crackers. Then use tongs to dip the cracker into the melted chocolate. Lay the Georgia cracker out on wax paper to dry. Enjoy!

Tim McGraw in another movie



Tim McGraw, the singer/actor is already jumping into his next role -- in an action flick that also stars Denzel Washington and Ryan Reynolds. He has signed on to the Daniel Espinosa-directed 'Safe House,' which will be set in Washington, D.C., and will feature Ryan as a young CIA agent working to get a criminal to a secure location. Tim says he's playing a spy in the flick that will soon begin filming in South Africa and is currently scheduled to open in February 2012.

Taylor Swift Pumpkin Spice Cookies

* For the cookies:
* 1 cup sugar
* 2 sticks unsalted butter, softened
* 2 tablespoons Maple syrup
* 2 eggs
* 1 cup canned pumpkin
* 1 1/2 teaspoons ground cinnamon
* 1/2 teaspoon ground all spice
* 1/4 teaspoon freshly grated nutmeg
* Pinch ground cloves
* 2 1/2 cups flour
* 2 teaspoons baking powder
* Pinch of salt
* For the frosting:
* 2 (8-ounce) packages cream cheese
* 1 cup confectioners sugar
* 1/4 cup milk
* 1 tablespoon vanilla extract
* Zest of one lemon
* For Garnish:
* Whole pecans

Directions

Preheat the oven to 350 degrees F. In a mixer, fitted with a paddle, cream the sugar and the butter until light and fluffy. Add the maple syrup and eggs. Mix to incorporate. Add the pumpkin and mix to incorporate. Sift together the flour, baking powder, salt, cinnamon, allspice, nutmeg and cloves. Add the dry ingredients to the batter and mix well. Drop rounded tablespoonfuls onto ungreased cookie sheets. Bake for 10 minutes, or until lightly golden brown around the edges. Cool on racks. When cool, ice with the cream cheese frosting.

For the Frosting: In a mixer, fitted with a paddle, add the cream cheese. Beat until light and fluffy. Beat in the powdered sugar until smooth. Add milk and vanilla. Beat until smooth. If frosting is too thick, thin with a little more milk. Fold in the lemon zest. When cookies are cool spread with some of the frosting. Garnish with a whole pecan.

Zac Brown's Campire Chili

As cold as it is outside, a nice bowl of chili will warm you up. How about trying Zac Brown's chili recipe?

Zac Brown's Campfire Chili

Directions:
1. Brown together:
1 cup diced white onion
1 lb. beef-tenderloin tips, diced into 1/2-inch cubes
2 lbs. ground bison (If unavailable, substitute with ground beef)
1/2 lb. ground pork
1 Tbsp olive oil

2. Drain the grease. Then add the following:
1 Tbsp masa flour
1/2 Tbsp garlic powder
14.5-oz. can organic beef stock
14.5-oz. cans organic chicken stock
8-oz. can organic tomato sauce
4-oz. can mild diced green chilies
1/2 Tbsp ground cumin
1 fresh jalapeño pepper,
chopped fine
1 tsp black pepper
3 Tbsp organic chili powder

3. Simmer 1 hour. Then add:
4 oz. organic tomato sauce
4 Tbsp organic chili powder
2 Tbsp mild chili powder
2 Tbsp ground cumin
1 tsp garlic powder
1 tsp Tabasco
1/2 Tbsp brown sugar
15.5-oz. cans low-sodium pinto beans, drained
15.5-oz. cans low-sodium kidney beans, drained

4. Simmer 45 minutes and eat. :)

Recipes from Jennifer Nettles of Sugarland


Roasted Brussel Sprouts w/Pecans

2 lbs brussel sprouts trimmed and halved
1 cup pecans, roughly chopped
2 Tbsp Olive Oil
2 cloves garlic, finely chopped
Kosher salt and black pepper

-Heat oven to 400. On large rimmed baking sheet, toss brussel sprouts, pecans, oil, garlic, 1/2 tsp salt, and 1/4 tsp pepper. Turn the brussel sprouts cut-side down.
-Roast until golden and tender, 20-25 min. (Depending on your oven. I like to lean towards 25 min or until some have a little dark char in places.)

Roasted Cauliflower w/Tahini Sauce

1/4 cup extra virgin olive oil
4 tsp ground cumin
2 heads cauliflower, cored and broken into 1 1/2" florets
Kosher salt and black pepper to taste
1/2 cup tahini
3 cloves garlic, smashed and minced into a paste
Juice of 1 lemon

-Heat oven to 500. Toss together oil, cumin, cauliflower, and salt and pepper into a large bowl. Transfer to 2 rimmed baking sheets; spread out evenly. Bake, rotating pans from top to bottom and front to back, until cauliflower is browned and tender. 25-30 min. (Again, I like a little char here and there.)
-Meanwhile, combine tahini, garlic, lemon juice and 1/2 cup water in a small bowl and season w/ salt. Serve cauliflower hot or at room temperature w/tahini sauce.

Sweet Potato Pie

Crust
1 cup (4 oz) pecan halves
11 whole graham crackers, broken
4 tsp minced fresh ginger
2 Tbsp dark brown sugar
1/2 tsp kosher salt
1/2 tsp ground cinnamon
6 Tbsp unsalted butter, melted

Filling and topping
Four 8oz sweet potatoes
1/2 cup dark brown sugar
3 large eggs
2 Tbsp bourbon
1/2 cup heavy cream
1 cup granulated sugar
1/3 cup water
3 large egg whites
Pinch of salt
1 tsp pure vanilla extract

Make the crust:
1. Heat oven to 325. In a pie plate, toast the pecans for about 10 min, until fragrant and browned. Let cool completely.
2. In a food processor, combine pecans, graham crackers, ginger, brown sugar, salt and cinnamon; pulse until crumbs form. Add butter and process til incorporated. Press the crumbs evenly into a 9 or 10 inch pie plate. Bake crust for about 25 min, until lightly browned and fragrant. Using a rubber spatula, press down the crust and let cool completely. Wipe out the processor.

Meanwhile, make the filling and topping.
1. Prick the sweet potatoes all over with a fork and cook in a microwave on high power for 10 minutes, until just softened. Transfer sweet potatoes to the oven and roast for about 10 min longer, until soft. Let cool. Then, scrape out the flesh; you should have about 2 1/4 cups.
2. Transfer sweet potato to the food processor and puree until smooth. Add the brown sugar, eggs and bourbon and process until blended. Add the heavy cream and process until incorporated. Pour the filling into the crust and bake for about 50 min, until set and the top looks dry; cover the crust edges with foil if they darken. Let the pie cool completely. Preheat the broiler.
3. In a small saucepan, combine the granulated sugar and water and bring to a boil. Cook over high heat without stirring until a candy thermometer inserted in the syrup registers 240 (about 5 min). Meanwhile, in the bowl of a standing mixer fitted with the whisk, beat the egg whites with the salt until soft peaks form. With the machine on, carefully drizzle in the hot syrup and beat at high speed until the whites are stiff, glossy and warm to the touch (about 5 min). Beat in the vanilla.
4. Mound the meringue over the sweet potato filling, swirling it decoratively. Broil the pie 4-6 inches from the heat for about 30 seconds, until the meringue is light browned. Cut the pie into wedges and serve.
Make ahead. The pie can be refrigerated overnight!

Caprese Salad
This can be made easily with as much or little as you like.

Fresh tomatoes (heirlooms are lovely if you can get them)
Fresh Mozzarella (I'm talking balls here, not shredded!)
Fresh basil (or dried can be sprinkled at the end, but fresh is way better!)
Balsamic vinegar
Olive oil
Salt/pepper

Cut tomatoes and mozzarella into slices (about 1/4 or 1/2 inch thick)
Stack tomato and mozzarella, in alternating slices. 2 each.
While stacking, remember to salt and pepper the tomatoes before placing the mozzarella.
Garnish with fresh basil (can also sprinkle some dried oregano if you like)
Drizzle with balsamic vinegar and olive oil.

Trisha Yearwoods Blackberry Cobbler


  • 8 Servings
  • Prep 30 min (plus cooling) Bake 25 min

Ingredients:

  • 3/4 cup sugar
  • 2 cups plus 1 tablespoon self-rising flour
  • 12 ounces fresh blackberries or frozen blueberries (about 3 cups)
  • 4 tablespoons butter, cut into small pieces and chilled
  • 2/3 cup milk
  • Vanilla ice cream, for serving

Directions:

  1. Preheat the oven to 450°. Grease an 8-inch square baking dish. In a medium saucepan, combine the sugar, 1 tablespoon flour, the berries and 1 cup water. Bring to a boil, lower the heat and simmer for 2 minutes; remove from the heat.

  2. In a medium bowl, rub the butter into the remaining 2 cups flour. Stir in the milk until a soft dough forms. Turn out the dough on a lightly floured surface. Pat into a square, then roll into an 8-inch square; cut into 6 long strips.

  3. Pour 1 cup of the berry mixture into the pan. Arrange 3 dough strips an equal distance apart over the blackberry mix. Bake until golden-brown, about 12 minutes, then remove from the oven and pour the remaining berry mixture over the baked strips. Arrange another layer of dough strips perpendicular to the first row and bake until golden-brown, about 12 minutes more. Let cool for about 20 minutes. Serve warm with the ice cream. If you use frozen blueberries, add 1 tablespoon fresh lemon juice to the simmered filling.

Garths Big Announcement!


Garth Brooks has confirmed an upcoming concert date in Nashville along with his wife Trisha Yearwood. The appearance will mark Brooks' first Nashville concert in a decade and will take place on December 17 at the Bridgestone Arena.

All proceeds from the show will benefit the Community Foundation of Middle Tennessee Flood Relief, which provides services to victims of last spring's floods.

Tickets for the show will be made available beginning on November 3. Brooks is once again keeping prices low, with tickets priced at $25 plus handling fees.

Brooks officially retired in 2001, but returned to the stage earlier this year after signing a five-year concert deal with the Wynn Hotel and Casino on the Las Vegas Strip. The first five shows of his Las Vegas run sold out within hours of tickets going on sale. (countrynow.com)

Taylor Swift Wax Statue


Taylor Swift will make a wonderful new addition to the Madame Tussauds New York family.
Taylor will be adorned in a black and silver dress, made by designer Jenny Packham and personally donated by Taylor. Her statue will be unveiled next week on October 27, two days after her 'Speak Now' release date. Check out a sneak peek of Taylor's waxed twin below, sent to The Boot by Madame Tussauds. You can see the sparkly Packham dress, though not the statue's face just yet.

Taylor joins fellow country superstar Carrie Underwood, as well as President Barack Obama, Bruce Springsteen, the late Princess Diana, Bono, Robert Pattinson and Madonna in having wax figures at the historic museum.

Keith Urban CD cover decided!

The fans have spoken, and this alluring photo of Keith Urban and his beloved guitar is their choice for the singer's 'Get Closer' album cover. Votes were cast via The Boot, Facebook and Twitter to help the guitar slinger decide between this pic and a closeup shot of him in a woman's arms. (See the runner-up here.) It was a tight race, as you can see in The Boot's poll, which showed 51% of fans opted for the chosen shot, while 49% were for the latter. The CD comes out on November 12th!

Christmas Music from Lady A


Lady Antebellum have confirmed plans for a six-song Christmas EP to be released exclusively through Target stores on October 12. The album, titled A Merry Little Christmas, will feature five seasonal favorites such as "Silver Bells." It also includes a new song titled "On This Winter's Night," which was written for the group by Tom Douglas, who also co-wrote Lady A's singles "I Run to You" and "Hello World." Alan Jackson- 34 Number Ones CD

Alan Jackson knows exactly how many No. 1 hits he's had in his 20-year career: 34. And now the country superstar is celebrating that achievement with the aptly-titled, '34 Number Ones,' two-disc set, hitting store shelves November 23.

The 37-track collection includes several of the Georgia native's best-known hits, including his first No.1, 'Here in the Real World,' the Jimmy Buffett duet, 'It's Five o'clock Somewhere' and the Grammy-winning hit, 'Where Were You (When the World Stopped Turning)'. In addition to the 34 chart-topping tunes, the upcoming project also includes Zac Brown Band's new single,'As She's Walking Away,' featuring guest vocals by Alan, plus 'Look at Me,' a song Alan penned for the 2008 film, 'Billy: The Early Years.' CMA Nominees


Miranda Lambert is the leader of the 2010 CMA Award nominee pack, with nine nominations going into November's broadcast, including her first-ever nod for the coveted Entertainer of the Year honor. It's the most nominations ever for a female artist in the history of the CMAs.

"It's unbelievable. I'm really shocked at some of my nominations!" a beaming Miranda said on ABC's 'Good Morning America' Wednesday after announcing the nominees alongside Dierks Bentley, himself a three-time nominee this year.

"2010 is definitely my lucky year," Miranda continued. "I've started putting '10' on everything. I got engaged, now the CMAs ... I didn't even think I was eligible for nine awards!"

Miranda is up against fiancé Blake Shelton in three different categories, while Blake also scores his first-ever nomination for Male Vocalist of the Year. Other first-time nominees include Steel Magnolia in the Vocal Duo category and the Band Perry for Vocal Group. CMA first-timers Luke Bryan, Easton Corbin, Jerrod Niemann and Chris Young are all nominated for New Artist of the Year, competing against four-time nominees this year, the Zac Brown Band.

Taylor Swift, who led the 2009 CMA winners with four trophies including the night's biggest honor, Entertainer of the Year, walked away with only one nomination this year, for Female Vocalist, which she also won last year. She's up against Miranda, Reba McEntire, Martina McBride and Carrie Underwood. Taylor will pass her Entertainer of the Year honors on to either Miranda, Lady Antebellum, Brad Paisley, Keith Urban or the Zac Brown Band.

The 44th Annual Country Music Association Awards will air live from Nashville on November 10. Brad Paisley (who has three nods) and Carrie Underwood (a two-time nominee) will co-host the show for the third year in a row. See the full list of 2010 CMA Award nominations below.

Josh Turner's breaking news...

Josh Turner and his wife Jennifer are expecting their third boy, the couple announced on NBC's 'Today' show this morning.

Josh sat next to co-host Hoda Kotb and Jennifer -- who is five months pregnant and apparently had to be persuaded to appear -- sat at the news desk when the couple happily announced their "breaking news." The couple have two other sons, Hampton, 3 1/2, and Colby, 1. (theboot.com)

Miranda live DVD


Columbia Records Miranda Lambert is bringing her live show to your living room. The country songbird will release her first ever live DVD, 'Revolution: Live by Candlelight,' on October 12. The DVD will feature six songs performed in an intimate acoustic setting from a dimly lit stage surrounded by, you guessed it, candles.

The DVD will include performances of both of Miranda's No. 1 hit singles, 'White Liar' and 'The House That Built Me,' as well as other tracks from her critically acclaimed current album, 'Revolution.' It will also have a bonus track of Miranda performing one of her all-time favorite songs, 'Love Is Looking for You,' from her 'Kerosene' album. (theboot.com)

With Kathie Lee Gifford away on vacation this week, NBC has tapped several of country's top stars to co-host the Today show.

Blake Shelton started off the week on Monday, with Martina McBride filling in on Tuesday. John Rich steps in Wednesday, Trisha Yearwood takes Thursday and Josh Turner will close out the week on Friday.

Each star will appear during the show's fourth hour. They will join Kathie Lee's regular partner Hoda Kotb. The network has not confirmed if any of the special guest hosts will perform on the show, though Shelton did serenade Kotb with "Who You Are When I'm Not Looking," which is featured on his latest six-pak release.

While co-hosting the show on Monday, Shelton also showed off his cooking skills, fashion sense and style of tweeting. In other news, his current hit single "All About Tonight" has taken the top spot on the Billboard Country Songs chart for the second week in a row. (countrynow.com)
