Country Stars 'Out and About'

Over the weekend Dierks Bentley performed in the streets of New York. He treated passers-by to Bill Monroe's "Roll On, Buddy" and Merle Haggard's "Mama Tried." Bentley asked at one point, "You like Merle Haggard?" But they clearly fans weren't moved until he busted out " Am I The Only One," which got several fist-pumps, high-fives and camera flashes.

Muvico- Safe Halloween

Weekend Recipe

Faith Hill's Greek Salad

4 romaine lettuce hearts, leaves torn into bite-size pieces
2 cups crumbled feta cheese
2 Japanese seedless cucumbers, chopped
2 tomatoes, preferably heirloom, chopped
1 green bell pepper, seeded and cut into strips
1 red bell pepper, seeded and cut into strips
1 yellow bell pepper, seeded and cut into strips
1 red onion, sliced
½ cup pitted kalamata olives
½ cup pitted green olives
2/3 cup extra-virgin olive oil
1/3 cup balsamic vinegar
Salt and freshly ground black pepper

The key here is to use good-quality ingredients -- perfectly ripe tomatoes, good feta and olives, and a high-quality cold-pressed olive oil. You can arrange this spectacular-looking salad on the platter up to an hour in advance, then dress it right before serving; just be sure to tear the lettuce rather than cut it with a metal knife so the edges don't turn brown.

Put the lettuce on a large, deep oval serving platter. Arrange the cheese, cucumbers, tomatoes, peppers, onion and olives in rows on top of the lettuce.

In a small bowl, whisk together the oil and vinegar; season with salt and pepper to taste, then drizzle the vinaigrette over the salad. Serve immediately.

Weekend Recipe

Bev Lambert's Famous Meatloaf (Miranda's Mom)

  • 2 pounds lean ground beef
  • 1 pound ground pork sausage
  • 18 saltine crackers, crushed
  • 1/2 green bell pepper, diced
  • 1/2 onion, finely chopped
  • 2 large eggs, lightly beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 1/2 cup firmly packed brown sugar, divided
  • 1/2 cup ketchup


  • 1. Preheat oven to 350°. Combine first 8 ingredients and 1/4 cup brown sugar in a medium bowl just until blended. Place mixture in a lightly greased 11- x 7-inch baking dish, and shape mixture into a 10- x 5-inch loaf.
  • 2. Bake at 350° for 1 hour. Remove from oven, and drain. Stir together ketchup and remaining 1/4 cup brown sugar; pour over meatloaf. Bake 15 more minutes or until a meat thermometer inserted into thickest portion registers 160°. Remove from oven; let stand 20 minutes. Remove from baking dish before slicing.

Country Stars 'Out and About'

Carrie Underwood was out and about last week in her hometown of Checotah, OK. Carrie's foundation- C.A.T.S- Checotah Animal, Town and School helps general causes, needs, and services in the town of Checotah. Weekend Recipe

Sheryl Crow's Roasted-Potato Salad With Sweet Corn and Cider Vinegar

Serves 8


  • Vegetable oil cooking spray
  • 2 1/2 lbs unpeeled red potatoes, diced into 1/2-inch cubes
  • 1 medium red onion, thinly sliced
  • 2 tablespoons canola oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 1/2 cups roasted fresh corn
  • 1 cup diced celery
  • 2 teaspoons garlic powder
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup apple cider vinegar
  • 3/4 cup thinly sliced fresh basil


  1. Heat oven to 425°. Coat a baking sheet with cooking spray. Toss potatoes and onion with canola oil in a bowl; season with salt and pepper; spread evenly on baking sheet. Bake until crispy yet fork-tender, 20 to 25 minutes. Cool to room temperature. Return to bowl; add corn, celery and garlic powder. Whisk olive oil and vinegar in a bowl; drizzle over potatoes and onions; toss to coat well. Season with salt and pepper. Cover; refrigerate at least 2 hours and up to 8 hours; stir in basil before serving.

    Cookin' corn Soak unhusked ears of corn in water for 10 to 15 minutes. Heat oven to 375°. Cook ears in a shallow pan until kernels are tender, about 25 minutes. Let cool. Remove and discard husks and silk; slice kernels off cob. Three ears of corn should yield about 1 1/2 cups of kernels. If you have a little more, all the better! If you prefer to grill the corn in the husks, simply pull back husks to remove silk, then close husks back over ears of corn. Grill until kernels are tender, about 25 minutes. Let cool; shuck; slice kernels off cob.

Alan Jackson is coming to Mineral, Virginia

Remember that Concert contest trying to get Alan Jackson to your town??? Well the winner is...........................MINERAL!!!!!!!

Now all Mineral needs to do is figure out where to hold the concert. Officials are reportedly looking at two sights -- Walton Park and the Louisa County High School football stadium -- for the show, which is expected to draw between 1,000 and 3,000 people.

Weekend Recipe

Sara Evans's Honey-Beer Ham

Serves 16


  • 1 bone-in ham shank (8 lb)
  • 12 oz beer
  • 1 cup honey
  • 1 cup brown sugar
  • 2 tablespoons whole cloves (or 1/2 tsp ground cloves)


  1. Heat oven to 275°. Place ham in a roasting pan with cut side down. Pour beer over ham. Drizzle honey evenly over ham. Pat sugar evenly over honey. Score ham and pierce with whole cloves (or sprinkle with ground cloves). Cook, uncovered, until internal temperature reaches 160°, 4 to 6 hours.

*Note: I actually bought ground cloves at the grocery store yesterday for something I was making and I couldn't believe they were $9.49. (OUCH) Since this recipe calls for Cloves, I'd suggest that you go to the Hispanic section at Bloom. They have little packets of whole cloves for just 55 cents. That will save you some money. :)

Back in on September 19th, Dierks Bentley took some time away from singing to have some fun with his family. This picture is from the San Diego SeaWorld. Dierks is up close petting Steimie the bottlenose dolphin. :)
