Attention Male Singers......

Mercury Records is looking for a male singer, and there's no contest or reality show involved. Mercury wants a male singer between the ages of 18 and 26 who can sing both country and rock. The preferred candidate will make an album with a top producer and will go on tour. Submissions are sent directly to the A&R department.

Singers must sing one of these three songs:

Randy Travis- "Forever and Ever Amen"
Bob Segar- "Rock and Roll never forgets"
or
Frankie Miller- "Darlin" (British singer)

Weekend Recipe


CREME BRULEE from Andy Griggs

Recipe
Ingredients:


3 egg yolks
1 cup granulated sugar
2 cups heavy cream
1 teaspoon vanilla extract
4 Tablespoon brown sugar


Directions:


Preheat oven 250 degrees.

1. Combine egg yolks and sugar. Beat until well creamed.

2. In saucepan, combine heavy cream and vanilla extract, blending over medium heat until mixture just simmers.

3. Remove from heat and slowly pour into egg mixture while whipping.

4. Then strain the mixture to remove any solids that may have developed.

5. Divide into 4 serving dishes or ramekins. Place dishes in pan with 1 inch of water and place in oven for 50 minutes.

6. Remove and place in refrigerator for 6 -12 hours.

7. Place about 1 Tablespoon of brown sugar on top of each crème brulee. Using a kitchen blow torch, caramelize the sugar until it becomes dark brown and crispy, then serve! If you do not have a kitchen blow torch, place the dishes under the broiler until the sugar is caramelized. Watch it carefully so it does not burn.

Randy Travis CD @ Cracker Barrel


Randy Travis is the latest country superstar releasing a new collection of tunes through Cracker Barrel Old Country Store. The 11-track CD includes nine of Randy's biggest hits, plus two never-before-released tunes. Proceeds from the sale of the album will benefit the Wounded Warrior Project.

The upcoming self-titled CD will be available at Cracker Barrel stores on Monday, May 2. (theboot.com)

Weekend Recipe


BROCCOLI CHEESE CASSEROLE from Alison Krauss


Ingredients:

10 ounces frozen broccoli, thawed
½ cup chopped onion
½ cup celery, chopped chunky
10 oz. jar Cheese Whiz
1 can cream of mushroom soup
¼ cup melted butter
1 cup rice, uncooked
1 cup water



Directions:


Preheat oven to 350 degrees.

1. In a large bowl, combine all ingredients and mix well.

2. Grease a 9 x 12 shallow glass baking dish. Spread the mixture evenly in the pan. Bake at 350 degrees for about 50 minutes, until the sides are turning golden brown.

NOTE: Alison suggests that you use the shallow baking dish rather than a tall-sided casserole dish. The shallow dish allows the ingredients to set more firmly into a hearty casserole.

Weekend Recipe



Martina McBride's Corn Cornbread Recipe.

Ingredients

1 1/4 c. yellow cornmeal, plus more for pan
3/4 c. sugar
1/2 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 lg. eggs
1/2 c. low-fat buttermilk
1/2 c. whole milk
1/2 c. vegetable oil
1 c. fresh corn kernels


Directions

1. Preheat oven to 350°F. Grease 9" by 5" loaf pan and dust with cornmeal.

2. In large bowl, combine cornmeal, sugar, flour, baking powder, baking soda, and salt. In medium bowl, whisk eggs, buttermilk, milk, and oil. Stir egg mixture into cornmeal mixture until just combined. With rubber spatula, stir in corn. Pour batter into prepared pan.

3. Bake 15 minutes. Reset oven control to 325°F, and bake 45 to 55 minutes longer or until toothpick inserted in center comes out clean. Cool in pan on wire rack 30 minutes. Remove from pan and cut into thick slices to serve. Makes 12 servings.

Weekend Recipe


JOE DIFFIE'S WILD RICE STUFFING with Goat Cheese

Recipe
Ingredients:
1 ½ cups wild rice
5 cups water
Salt to taste
½ cup coarsely chopped chorizo sausage
4 Tablespoons unsalted butter
1 large onion, finely diced
2 carrots, finely chopped
3 celery stalks, finely chopped
1 Tablespoon minced garlic
¾ lb stale country style bread, cubed
6 ounces goat cheese
2 Tablespoons finely chopped fresh Italian parsley
1 Tablespoon finely chopped fresh thyme
1 ½ cups chicken stock, plus extra if needed
Salt and pepper
Directions:


Preheat oven to 350 degrees.

1. Place rice, water, and salt in a medium saucepan and bring to a boil over medium high heat. Simmer until the grains open all the way. Drain rice and set aside.

2. Cook chorizo in a small saucepan over medium heat until the fat is rendered and the chorizo is a little crisp. Drain and set aside.

3. Melt butter in a large saucepan over medium heat. Add onion, carrots, and celery, cook for about 4 minutes. Add garlic and cook for 1 more minute.

4. Add cooked rice, cooked chorizo, bread, goat cheese, parsley, thyme, and stock. Stir to combine. The mixture should be quite wet. Add a little more stock or water if needed. Season to taste with salt and pepper.

5. Transfer to a buttered baking dish and bake uncovered in oven until golden brown and heated through, about 25 to 30 minutes.

George Strait's Carne Guisada


Ingredients:

Servings: 4



Directions:

Prep Time: 5 mins

Total Time: 25 mins

  1. Brown steak in butter in skillet.
  2. Add onion and green pepper.
  3. Sprinkle with flour; mix well.
  4. Combine garlic, tomatoes, cumin and pepper in bowl; mash well.
  5. Add to beef.
  6. Simmer for 20 minutes, adding water if needed for desired consistency.
