Weekend Recipe


CRAIG MORGAN GLAZED CREAM CHEESE COOKIES



Ingredients:

3/4 cup butter, softened
1 (3 oz) pkg cream cheese, softened
3/4 cup sugar
3/4 cup light brown sugar, firmly packed
2 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla extract
1 ½ cups toasted pecan pieces

Directions:


Preheat oven to 350 degrees.

1. In a large bowl, beat butter cream cheese at medium speed with an electric mixer until creamy.

2. Gradually add sugars, beating until light and fluffy.

3. Add eggs one at a time, beating until blended after each addition.

4. Combine flour, baking powder, and salt. Add to butter mixture, beating well.

5. Stir in vanilla and pecans. Cover and chill one hour.

6. Drop dough by rounded tablespoons 2 inches apart onto un-greased baking sheets. Bake for 10-12 minutes or until edges are golden. Cool 2 minutes on baking sheets. Remove to wire racks to cool.

Makes 3 ½ dozen cookies.

Glaze:

Ingredients:

1/4 cup cream cheese, softened
2 Tablespoons powdered sugar
1 ½ Tablespoons milk

Directions:

In a saucepan over low heat, whisk together softened cream cheese, powdered sugar, and milk until smooth. Drizzle glaze over cookies. Let stand until set.

Country Stars 'Out and About'


Darius Rucker earned a new title last week. The Charleston, S.C. native was awarded an honorary doctorate by the Medical University of South Carolina, where he was invited to give this year's commencement address

"I want to say what an honor this is to be here with you," Darius said to the graduating class (quote via South Carolina newspaper Post and Courier). "I got to go to one graduation in my life and that was Middleton High School right down the road."

The 45-year-old received the accolade for his contributions on MUSC's board of directors and generous donations to the hospital, as well as the ongoing efforts of his former band, Hootie & The Blowfish, helping children in need to continue their education. (theboot.com)

STRAWBERRY COBBLER from Trent Willmon

Recipe

INGREDIENTS:

1 cup sugar
1 cup flour
1 cup milk
stick of butter, melted
1 ½ cup of chopped, fresh strawberries
1/2 cup brown sugar

DIRECTIONS:

Preheat oven to 350 degrees.

1. In a medium bowl, mix together sugar and flour.

2. Stir in milk and melted butter.

3. Stir in strawberries, then pour into an un-greased 8x8 baking dish.

4. Sprinkle the top with brown sugar, bake for 45 minutes.

5. Serve warm with vanilla ice cream.

Some Honeymoon details....


Mr. and Mrs. Shelton are now having a little "staycation," instead of going on an exotic honeymoon. They're spending some much-needed alone time together at their home in Tishomingo, Okla. The outdoorsy twosome are relaxing and doing what they'd normally do on time off from the road. "Honeymoon bliss!" Miranda tweeted on Tuesday, posting this picture of her holding up a fish she caught that's almost as big as her! (theboot.com)

ALABAMA GRILL'S OWN MEATLOAF RECIPE from Alabama Grill Restaurant


INGREDIENTS

5 pounds hamburger meat
5 large eggs
2 - 1/2 cups bread crumbs
1 cup ketchup
1/4 cup brown sugar
1/4 cup mustard
2 tablespoons white vinegar
1 tablespoon granulated garlic
1 tablespoon onion powder
1/2 cup grated celery
1/2 cup yellow onion
1/2 cup green pepper
Salt and pepper to taste

Tomato topping for meatloaf:
1/2 cup ketchup
Small can of tomato paste
1/4 teaspoon chili powder



DIRECTIONS

Preheat oven to 325 degrees.

1. Blend all ingredients well and place in a 9 x 12 container and bake for 30 minutes.

2. Drain grease and then add the tomato topping over the meatloaf. Finish cooking in oven until done (approximately 5 - 20 minutes).

Weekend Recipe


Shania's Tofu Scramble

1 small bunch of fresh asparagus heads

1 cup of fresh baby spinach

1/2 cup of white onions, finely chopped

1 clove of garlic, minced

1-2 tablespoons of agave syrup

1 teaspoon of fresh basil, chopped

1 teaspoon of fresh parsley, chopped

1/2 cup of yellow cheddar cheese, grated

Salt and pepper, to taste

Preparing Shania's Tofu Scramble:

Takes about 5 minutes to cook.

First, put two medium size pans on high heat. In one pan, add olive oil and bring it to a simmer. Crumble up the tofu with your hands and then add it to the olive oil. Make sure the tofu is as dry as possible because it will cook easier.

Add the broccoli and asparagus heads to the second pan and cover the vegetables with a little bit of water, about 1/4 of a cup. Add the agave syrup and a pinch of salt. Place a lid over the vegetables and allow them to steam for a few minutes.

Returning to the tofu pan, stir the tofu constantly until it starts to brown and add pepper. When it starts to stick to the sides of the pan, add the parmesan cheese and mix.

In the vegetable pan, after broccoli and asparagus have had a chance to cook, add the raw parsley, basil and spinach. Stir together, let it sit for about 30 seconds with the lid on and then drain the water from the vegetables. Return the pan to the stove.

Add the tofu and parmesan cheese mixture to the vegetables and stir until well blended. Add the cheddar cheese, stir until melted, and enjoy!

Martina's New Album
