His ’n’ Hers Deviled Eggs

You won’t go to a southern picnic or covered-dish supper and not see deviled eggs. Garth and I grew up eating different versions of this dish, so both varieties are included here. Honestly, I never met a deviled egg I didn’t like, so these are both yummy to me!

His Filling
12 large eggs
1⁄4 cup mayonnaise
2 teaspoons yellow mustard
1 tablespoon butter, softened
Salt and pepper to taste

Her Filling
1⁄4 cup mayonnaise
11⁄2 tablespoons sweet pickle relish
1 teaspoon yellow mustard
Salt and pepper to taste
Paprika for garnish

Place the eggs in a medium saucepan with water to cover and bring to a boil. Remove from the heat, cover the pan, and let stand for 20 minutes. Pour off the hot water and refill the saucepan with cold water. Crack the eggsshells all over and let them sit in the cold water for 5 minutes. Peel the eggs, cover, and chill for at least 1 hour. Halve the eggs lengthwise. Carefully remove the yolks and transfer them to a small bowl. Mash the yolks with a fork, then stir in the filling ingredients of your choice. Season with salt and pepper. Scoop a spoonful of the mixture into each egg white half. Sprinkle the tops with paprika.

Another Concert for you.....

Weekend Recipe

Artist: Faith Hill
Coca Cola Cake

2 Cups unsifted flour
2 Cups sugar
2 Sticks butter
2 TBSP. cocoa
1 Cup Coca-Cola
½ Cup buttermilk
1 teas. Baking soda
2 Eggs, beaten
1 TBSP vanilla
1 ½ cups miniature marshmallows

Sift flour & sugar in bowl
Heat butter, cocoa and coke to boiling point. Pour over flour/sugar mixture.
Add buttermilk, baking soda, eggs, vanilla and marshmallows. (Batter will be thin and marshmallows will float to top)
Pour batter into greased and floured 9x13 pan. Bake @ 350ยบ for 30-35 minutes. Ice cake while hot.

Icing for Coca-Cola Cake

½ Cup butter
3 TBSP cocoa
6 TBSP Coca-Cola
16 oz. confectioners sugar
Combine all ingredients & heat to boiling.
Pour over cake while hot.

Weekend Recipe


from Jeff Bates Memaw, Nadine Daniel



1 cup sugar
2 heaping tablespoons all purpose flour
3 egg yolks (beaten) (Save the whites for the meringue.)
1 1/2 cups milk
1/2 stick butter
1 teaspoon vanilla extract
bananas, sliced (approx. 2 medium bananas)
1 box vanilla wafers


Preheat oven to 375 degrees.

1. n a large mixing bowl, add 1 cup of sugar and 2 heaping tablespoons flour and mix together.

2. Then add 3 beaten eggs, 1 1/2 cups milk, and 1 teaspoon vanilla extract. Mix together until well blended.

3. Pour contents into a saucepan, add 1/2 stick butter and bring to a gentle boil over medium heat until it has thickened to a pudding consistency. Stir often being careful not to scorch the pudding. Remove from heat.

4. In a square baking dish, cover the bottom and sides with vanilla wafers. Place sliced bananas on top of wafers and around sides of the dish. Pour in pudding and add more wafers and bananas to the top.

5. Top pudding with the meringue and place in 375 degree preheated oven for 12-15 minutes until meringue browns.


3 egg whites
1/2 cup sugar


1. Beat the egg whites at high speed until they form soft peaks.

2. At high speed, gradually add the sugar, a tablespoon at a time, and beat until stiff peaks form.

3. Spread the meringue over the pudding, sealing it at the sides of the dish, and bake as instructed above.

4th of July 2011

Weekend Recipe




1 cup sugar
1 cup flour
1 cup milk
stick of butter, melted
1 ½ cup of chopped, fresh strawberries
1/2 cup brown sugar


1. In a medium bowl, mix together sugar and flour.

2. Stir in milk and melted butter.

3. Stir in strawberries, then pour into an un-greased 8x8 baking dish.

4. Sprinkle the top with brown sugar, bake for 45 minutes.

Serve warm with vanilla ice cream.
