Garth Brooks Wins against Hospital

A jury has awarded Garth Brooks $1 million in his breach-of-contract lawsuit against the Integris Health System, according to the Associated Press.

On Tuesday (Jan. 25), jurors in Claremore, Okla. ruled that Integris Canadian Valley Regional Hospital in Yukon, Okla., has to return the $500,000 donation that Garth made to the facility in 2005. Additionally, Integris has been ordered to pay another $500,000 in punitive damages.

"I no longer feel like I'm crazy," the country superstar said following the verdict, calling the jurors "heroes" for ruling that Integras was in breach of contact and committed fraud with malice intent and reckless disregard.

Lady A is featured in the Travel Guide's music guide, which gives prospective travelers info on the group's Georgia heritage:

"Charles Kelley and Dave Haywood of Lady Antebellum were raised in Columbia County in east central Georgia. The county recently honored the country supergroup by naming its new performance venue the Lady Antebellum Pavilion & Josh Kelley Stage."

Auditions
You MUST sign in the hour before each audition

93.3 WFLS will conduct 3 open auditions for Country Idol 2012.
Friday, January 20; 5 - 7 p.m.; Spotsylvania Towne Centre (center court)
Saturday, January 21; 11 a.m. - 1 p.m.; Spotsylvania Towne Centre (center court)
Saturday, January 22; 4 - 6 p.m.; Spotsylvania Towne Centre (center court)

Audition sessions are limited to the first 50 contestants to register. Registration is first come first served, and begins 1 hour before scheduled audition time.
During auditions, contestants will be called by name and registration number to the stage to perform. If a contestant fails to arrive on stage after their name and number are called twice, the contestant is automatically eliminated.

Each contestant will have 30 seconds to sing (acapella) a Country Music song of their choice.

The Judges will choose 10 contestants to advance based on scores and judging criteria listed above. The 10 contestants in each audition will advance to the 1st semifinal round on January 28, 2012; location TBD. In the event of a tie for the 10th spot in an audition, 93.3 WFLS retains the right to add extra semifinalists to the 1st semifinal round.

Contestants may attend multiple audition sessions, but must register for each individual audition session during the hour prior to audition time.

Jennifer Nettles' (Mom's) Southern Baked Chicken Casserole

Ingredients

2 tablespoons unsalted butter
1 tablespoon vegetable oil
1 small onion, finely chopped
1 red bell pepper, finely chopped
1 celery rib, finely chopped
1/4 cup all-purpose flour
1 1/2 cups milk
Salt and freshly ground pepper
Tabasco
1/2 cup mayonnaise
4 cups shredded rotisserie chicken
1/2 cup finely chopped pimentos (from a 4-ounce jar)
1 sleeve Ritz crackers, crushed (4 ounces)

Preheat the oven to 350°. In a large saucepan, melt the butter in the oil. Add the onion, bell pepper and celery and cook over moderately high heat, stirring, until softened, about 6 minutes. Add the flour and cook, stirring, for 2 minutes. Add the milk and whisk until combined. Simmer until thickened, about 3 minutes. Season the mixture with salt, pepper and Tabasco. Remove from the heat and stir in the mayonnaise, chicken and pimentos.
Transfer the chicken mixture to a 1 1/2-quart shallow baking dish. Scatter the crushed crackers on top. Bake for about 45 minutes, until the casserole is golden and bubbling. Let rest for 15 minutes before serving.

Ingredients for Shania's Tofu Scramble:

2-3 tablespoons of olive oil

1 package of firm tofu, very dry

1/3 cup of grated parmesan cheese

1 cup of raw broccoli

1 small bunch of fresh asparagus heads

1 cup of fresh baby spinach

1/2 cup of white onions, finely chopped

1 clove of garlic, minced

1-2 tablespoons of agave syrup

1 teaspoon of fresh basil, chopped

1 teaspoon of fresh parsley, chopped

1/2 cup of yellow cheddar cheese, grated

Salt and pepper, to taste

Preparing Shania's Tofu Scramble:

Takes about 5 minutes to cook.

First, put two medium size pans on high heat. In one pan, add olive oil and bring it to a simmer. Crumble up the tofu with your hands and then add it to the olive oil. Make sure the tofu is as dry as possible because it will cook easier.

Add the broccoli and asparagus heads to the second pan and cover the vegetables with a little bit of water, about 1/4 of a cup. Add the agave syrup and a pinch of salt. Place a lid over the vegetables and allow them to steam for a few minutes.

Returning to the tofu pan, stir the tofu constantly until it starts to brown and add pepper. When it starts to stick to the sides of the pan, add the parmesan cheese and mix.

In the vegetable pan, after broccoli and asparagus have had a chance to cook, add the raw parsley, basil and spinach. Stir together, let it sit for about 30 seconds with the lid on and then drain the water from the vegetables. Return the pan to the stove.

Add the tofu and parmesan cheese mixture to the vegetables and stir until well blended. Add the cheddar cheese, stir until melted, and enjoy!

Weekend Recipe

Alan's Christmas Fruit Salad

Bottom Layer:

1 6 oz package lime-flavored gelatin

2 heaping cups vanilla ice cream

1 16 oz can crushed pineapple, drained

Mix lime-flavored gelatin according to package instructions using 1 cup boiling water and 1 cup cold water. Add ice cream and pineapple, stirring until ice cream is dissolved. Pour in large mold or 9" x 13" dish. Refrigerate until completely set.

Middle Layer:

16 oz sour cream

1 cup mayonnaise

2 cups chopped walnuts

Mix sour cream, mayonnaise, and walnuts. Spread on lime mixture and return to refrigerator.

Topping:

1 6 oz package raspberry-flavored gelatin

1 16 oz package frozen strawberries, sliced and thawed

2-1/2 cups miniature marshmallows

Mix raspberry-flavored gelatin according to package directions using 1-1/2 cups boiling water and 1-1/2 cups cold water. Stir in strawberries and marshmallows. Allow to cool completely before adding to salad. Then gently pour over sour cream layer. Refrigerate until serving time, at least overnight.

Cut into squares or unmold and serve on lettuce.

Weekend Recipe

Trish Yearwood's Cheese Straws

Yields: 4 dozen

Oven Temp: 325

Ingredients

3 (10-ounce) bricks of sharp Cheddar cheese, room temperature
1 cup(s) butter, softened
4 cup(s) sifted all-purpose flour
2 teaspoon(s) salt
1/8 teaspoon(s) black pepper
1/8 teaspoon(s) cayenne pepper
1 dash(es) garlic powder

Preheat oven to 325 degrees F.
Put softened cheese and butter in bowl of a heavy-duty electric mixer. Using heaviest mixer attachment, beat cheese and butter until mixture has consistency of whipped cream, about 30 minutes.
On a sheet of waxed paper, sift 3 cups of the flour with the salt, black pepper, cayenne pepper, and garlic powder. Gradually add the seasoned flour to the cheese mixture by large spoonfuls, beating well after each addition. Add the unseasoned flour until the dough is somewhat stiff but still soft enough to be pushed though a cookie press; you may not need to add all the flour.
Lightly spray a cookie sheet with cooking spray. Put a portion of the dough into a cookie press fitted with the star tube and press the dough onto a cookie sheet in long strips. Bake for 20 minutes. The cheese straws should be golden brown and crisp.
With a sharp knife, cut the long strips into 3-inch lengths. Use a flat, thin spatula or an egg turner to remove the cheese strips from the pan. Allow them to cool on a wire rack.
When they are completely cool, store in a tightly covered container.

George Jones Breakfast Pizza

Ingredients:

1/2 pound George Jones Mild or Hot Sausage, cooked and drained

1 package crescent rolls

5 eggs

1/4 teaspoon dry mustard

1/4 teaspoon pepper

1-1/2 cups hash browns

1-1/2 cups grated cheddar cheese

Parmesan cheese

Preheat oven to 375 degrees. Grease and 8 x 8-inch or 9 x 9-inch pan. Unfold crescent rolls into strips and press together on bottom and sides. Whisk eggs, milk, mustard, and pepper together. Sprinkle the sausage, potatoes, then cheese on top of crescent rolls. Pour egg mixture over all. Sprinkle with Parmesan cheese.

Over the weekend Dierks Bentley performed in the streets of New York. He treated passers-by to Bill Monroe's "Roll On, Buddy" and Merle Haggard's "Mama Tried." Bentley asked at one point, "You like Merle Haggard?" But they clearly fans weren't moved until he busted out " Am I The Only One," which got several fist-pumps, high-fives and camera flashes.

Faith Hill's Greek Salad

4 romaine lettuce hearts, leaves torn into bite-size pieces
2 cups crumbled feta cheese
2 Japanese seedless cucumbers, chopped
2 tomatoes, preferably heirloom, chopped
1 green bell pepper, seeded and cut into strips
1 red bell pepper, seeded and cut into strips
1 yellow bell pepper, seeded and cut into strips
1 red onion, sliced
½ cup pitted kalamata olives
½ cup pitted green olives
2/3 cup extra-virgin olive oil
1/3 cup balsamic vinegar
Salt and freshly ground black pepper

The key here is to use good-quality ingredients -- perfectly ripe tomatoes, good feta and olives, and a high-quality cold-pressed olive oil. You can arrange this spectacular-looking salad on the platter up to an hour in advance, then dress it right before serving; just be sure to tear the lettuce rather than cut it with a metal knife so the edges don't turn brown.

Put the lettuce on a large, deep oval serving platter. Arrange the cheese, cucumbers, tomatoes, peppers, onion and olives in rows on top of the lettuce.

In a small bowl, whisk together the oil and vinegar; season with salt and pepper to taste, then drizzle the vinaigrette over the salad. Serve immediately.

Bev Lambert's Famous Meatloaf (Miranda's Mom)

Ingredients

2 pounds lean ground beef
1 pound ground pork sausage
18 saltine crackers, crushed
1/2 green bell pepper, diced
1/2 onion, finely chopped
2 large eggs, lightly beaten
1 tablespoon Worcestershire sauce
1 teaspoon yellow mustard
1/2 cup firmly packed brown sugar, divided
1/2 cup ketchup

Preparation

1. Preheat oven to 350°. Combine first 8 ingredients and 1/4 cup brown sugar in a medium bowl just until blended. Place mixture in a lightly greased 11- x 7-inch baking dish, and shape mixture into a 10- x 5-inch loaf.
2. Bake at 350° for 1 hour. Remove from oven, and drain. Stir together ketchup and remaining 1/4 cup brown sugar; pour over meatloaf. Bake 15 more minutes or until a meat thermometer inserted into thickest portion registers 160°. Remove from oven; let stand 20 minutes. Remove from baking dish before slicing.

Sheryl Crow's Roasted-Potato Salad With Sweet Corn and Cider Vinegar

Serves 8

INGREDIENTS

Vegetable oil cooking spray
2 1/2 lbs unpeeled red potatoes, diced into 1/2-inch cubes
1 medium red onion, thinly sliced
2 tablespoons canola oil
Kosher salt
Freshly ground black pepper
1 1/2 cups roasted fresh corn
1 cup diced celery
2 teaspoons garlic powder
1/2 cup extra-virgin olive oil
1/3 cup apple cider vinegar
3/4 cup thinly sliced fresh basil

PREPARATION

Heat oven to 425°. Coat a baking sheet with cooking spray. Toss potatoes and onion with canola oil in a bowl; season with salt and pepper; spread evenly on baking sheet. Bake until crispy yet fork-tender, 20 to 25 minutes. Cool to room temperature. Return to bowl; add corn, celery and garlic powder. Whisk olive oil and vinegar in a bowl; drizzle over potatoes and onions; toss to coat well. Season with salt and pepper. Cover; refrigerate at least 2 hours and up to 8 hours; stir in basil before serving.

Cookin' corn Soak unhusked ears of corn in water for 10 to 15 minutes. Heat oven to 375°. Cook ears in a shallow pan until kernels are tender, about 25 minutes. Let cool. Remove and discard husks and silk; slice kernels off cob. Three ears of corn should yield about 1 1/2 cups of kernels. If you have a little more, all the better! If you prefer to grill the corn in the husks, simply pull back husks to remove silk, then close husks back over ears of corn. Grill until kernels are tender, about 25 minutes. Let cool; shuck; slice kernels off cob.

Remember that Concert contest trying to get Alan Jackson to your town??? Well the winner is...........................MINERAL!!!!!!!

Now all Mineral needs to do is figure out where to hold the concert. Officials are reportedly looking at two sights -- Walton Park and the Louisa County High School football stadium -- for the show, which is expected to draw between 1,000 and 3,000 people.

Sara Evans's Honey-Beer Ham

Serves 16

INGREDIENTS

1 bone-in ham shank (8 lb)
12 oz beer
1 cup honey
1 cup brown sugar
2 tablespoons whole cloves (or 1/2 tsp ground cloves)

PREPARATION

Heat oven to 275°. Place ham in a roasting pan with cut side down. Pour beer over ham. Drizzle honey evenly over ham. Pat sugar evenly over honey. Score ham and pierce with whole cloves (or sprinkle with ground cloves). Cook, uncovered, until internal temperature reaches 160°, 4 to 6 hours.

*Note: I actually bought ground cloves at the grocery store yesterday for something I was making and I couldn't believe they were $9.49. (OUCH) Since this recipe calls for Cloves, I'd suggest that you go to the Hispanic section at Bloom. They have little packets of whole cloves for just 55 cents. That will save you some money. :)

Miranda Lambert's Raspberry-Lemon-Yogurt Bread

Serves 10

INGREDIENTS

Vegetable oil cooking spray
2 cups all-purpose flour
2/3 cup plus 1 tbsp sugar, divided
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup nonfat lemon yogurt
2 large eggs, lightly beaten
4 tablespoons unsalted butter, melted and slightly coole d
Grated zest of 1 lemon
1 teaspoon vanilla extract
2 cups fresh raspberries

PREPARATION

Heat oven to 350°. Coat a 1-lb loaf pan with cooking spray. Combine flour, 2/3 cup sugar, baking powder, baking soda and salt in a bowl. Combine yogurt, eggs, butter, zest and vanilla in a second bowl. Toss raspberries with remaining 1 tbsp sugar in a third bowl. Fold yogurt mixture into dry mixture; stir to combine completely. Gently fold in raspberries. Scrape batter evenly into loaf pan. Bake until top is gol den and springs back when you gently touch it, 65 minutes.

Carrie Underwood's No-Guilt Veggie Pizza

Serves 2

INGREDIENTS

Vegetable oil cooking spray
I Can't Believe It's Not Butter Spray
1 Food for Life Organic Ezekiel 4:9 Sprouted Grain (or whole-grain) 9-inch tortilla
1/4 cup pizza sauce
1/4 cup 2 percent shredded mozzarella
16 slices Yves Veggie Meatless Pepperoni (or 3 slices lean sandwich meat, cut into small pieces)
Vegetable toppings of your choice
1 cup mixed greens (optional)

Note: Carrie likes to add spinach, olives, onions and bell peppers.

PREPARATION

Heat oven to 400°. Coat a cookie sheet or pizza stone with cooking spray. Spray I Can't Believe It's Not Butter Spray on both sides of tortilla; place tortilla on sheet; spread with pizza sauce; sprinkle with cheese. Top with pepperoni slices and your favorite vegetable toppings. Bake until tortilla is crispy and cheese has melted, about 5 minutes. Top with mixed greens, if desired. Cut into 4 slices and enjoy.

Ingredients:

1 lb round steak, cubed
2 tablespoons butter
1 medium onion, sliced
1/4 green bell pepper, sliced
1 tablespoon flour
2 cloves garlic
1/2 can tomato (10 oz)
cumin
black pepper

Directions:

Brown steak in butter in skillet.
Add onion and green pepper.
Sprinkle with flour; mix well.
Combine garlic, tomatoes, cumin and pepper in bowl; mash well.
Add to beef.
Simmer for 20 minutes, adding water if needed for desired consistency.

Announced earlier today.....Paula Deen is coming to Fredericksburg!! Paula will be at Wegmans on October 13th from 4pm to 6pm. She'll be doing a signing for her new book 'Southern Cooking Bible'.
